You can use your favorite cut of chicken, either the breast, thigh or drumstick. Rub the chicken with kosher salt and black pepper and marinate it in buttermilk and hot sauce. The buttermilk helps make the chicken tender so don’t skip the marinating time. Shake off any excess buttermilk, coat the chicken in flour and hot chicken spices. The next step is to fry the chicken to crispy and juicy perfection. Be sure your oil is hot enough, it can be very helpful to use a food thermometer. To make the chicken piccata, you will need some few ingredients that are easily available. Gather chicken, salt, pepper, flour, butter, olive oil, stock, shallots, garlic, lemon and capers. Cut the chicken into pieces and dredge it with flour and fry it in oil. The next step is the preparation of the piccata sauce. Use the same oil left after frying the chicken to fry the shallot and add the stock. Leave it on fire for a few minutes then stir in butter, capers and lemon juice. Add your salt and pepper to taste. And that’s it. You just made your piccata sauce. Enjoy as is or with a side of vegetables such as roasted asparagus or potatoes.
